It goes without saying that planning a wedding can be stressful – a seemingly endless whirlwind of fittings, bookings and budgeting.  But few can bemoan the part of the planning process that involves taste-testing and judging a line-up of scrumptious sugary treats!

Cake-tasting is a perfect opportunity to involve your partner-to-be, as well as any friends or family you’d like to include in your cake critic committee.  After all, what brings people together more than the chance to evaluate culinary concoctions?  

So where should you start?  To avoid months of indigestion from compulsive cake-sampling, follow our list of basic tips and it won’t be long before you track down the perfect wedding cake… and best of all, you can eat it too! 

Design 
Show your patisserie or cake designer of choice a range of your favourite design elements (For e.g. colours, prints and motifs).  These may be developed into your cake design, or at least inform the concept. 

Try and incorporate the season or wedding theme into the cake design.  Think of seasonal flowers, such as vibrant, exotic blooms for a Summer beach wedding or ruby reds and dark orange flowers for an Autumn garden ceremony.  

Size
This will depend on both your number of guests and budget.  Cup cakes or profiteroles are readily divided into individual portions to make light work of serving.

Frosting and fillings
Buttercream frosting is the traditional favourite, while fruitcake fillings are the classic choice.  However, the sky’s the limit so make sure you choose a cake that tastes as delightful as it looks.  Chocolate fudge, carrot cakes and cupcake towers are gaining popularity with contemporary couples.

On a practical note, certain frostings hold up better in fluctuating weather conditions.  Fondant and marzipan are better for preserving larger cakes, as buttercream doesn’t store as well in the heat.

Cost saving tip: Use a smaller display cake for the official cutting, while serving your guests with pre-cut slices.  This will save both time and money, and if done discreetly, your guests will be none the wiser!
